Ingredients

  • 6 eggs, separated

  • 1 cup of sugar

  • Grated zest and juice of 1 lemon or 1 small orange

  • 1 1/3 cup almond flour

  • ½ tsp almond extract

Directions

  • Preheat oven to 350 degrees.
  • Beat 6 egg yolks, Add sugar gradually and beat until very creamy.
  • Add zest and juice, then almond flour, then almond extract.
  • In a separate bowl, beat egg whites until stiff but not dry.
  • Fold egg whites lightly into the batter.
  • Pour batter into an ungreased 8 or 9 inch spring form pan.
  • Bake for 30-40 minutes.
  • Let cool in pan before removing.
