Crystallized Ginger and Molasses Cookies

2¼ cups all-purpose flour
1 tsp. baking soda
1 tsp. ground ginger
1 tsp. cinnamon
½ tsp. ground clove
1 tsp. salt
¾ cup Earth Balance vegan butter, softened
1 cup dark brown sugar
⅓ cup molasses
¼ cup unsweetened applesauce
¾ cup chopped crystallized ginger
Brown sugar mixed with white sugar, for rolling
Directions
- Preheat oven to 350°F. Line two baking sheets with parchment paper.
- Combine flour, baking soda, spices and salt.
- In a mixing bowl, cream together the vegan butter and brown sugar until fluffy. Add molasses and applesauce and blend well. Add the flour mixture in batches until incorporated evenly. Fold in crystallized ginger.
- Form cookies into 1½-inch balls and roll in the brown sugar / white sugar mix.
- Transfer to the parchment paper–lined baking sheets and flatten them slightly with the bottom of a glass.
- Bake for 12 to 13 minutes; cookies should be soft in the center.
